I'm in Love

...with the area in which I live! Today the last day of February, Lars and I did a 44 mile loop, we call the Pinnacle Loop. For those familiar with the area it goes from Wenatchee out to Dryden and makes a loop back into Wenatchee.
The pictures were taken from an area in Dryden I think always looks so pretty, it looks for miles in each direction down the valley. It didn't hurt that the sun came out and it was in the 50's!
Thanks to my sister who moved here a couple weeks ago (yay) for coming to get the kids and watch them...they too had a great day jumping between my sisters and parents house!

Methow Fun

We were able to get away this weekend with some friends to the Methow Valley.
Since we haven't had any snow since the beginning of January, we weren't too sure how it would be up there so Friday afternoon we went on a 30 mile bike ride...gorgeous!
Saturday and Sunday we took our skiis and went up high. We found great snow in Mazama on Saturday with temps in the mid 40's and sun! Sunday we went towards Sun Mountain, a little more icy, but we still had a great time.
I feel so lucky to live to close to such a great get away, and even more lucky to have such wonderful friends to do it with!

Quinoa

Peppers stuffed with Quinoa.  Easy, healthy and oh so yummy!












Serves 6
2/3 cup of quinoa, rinsed and drained
6 red bell peppers (I used orange and yellow)
1 TBL. Olive oil
3/4 cup diced carrots
1/2 red onion
1 10oz pkg frozen spinach, thawes and drained
1 tsp chili powder
1/2 cup grated part skim mozzarella
1 can of kidney beans

Preheat oven to 350. Cook quinoa, set aside. Remove pepper tops, stems, and seeds. Bring a large pot of water to boil. Add peppers, boil for 5 minutes and drain. Heat oil in a skillet over medium heat. Add carrots, cook for 3 minutes. Add onion. cook 5 more minutes. Stir in spinach and beans. Remove from heat and mix in quinoa and chili powder. Fill peppers with quinoa mixture and place upright in a baking dish. Sprinkle with cheese. Add just enough water to form a very thin layer in the bottom of the dish. Bake 20 minutes or until tops are lightly browned. Serve immediately.

The last picture is what the filling looks like. I will say it alone would make a great side dish as well!

Birthday Fun

Logan had 3 days of birthday fun. Thursday her school party and family party (which she celebrated with Cal who turned 2).
Friday her actual birthday.
And Saturday her "friends" party at Brian's Bulldog pizza in cashmere. Great place, the kids bowled for an hour, then had pizza, opened presents and played video games for the next hour!

Happy Birthday Logan Bella

Happy Birthday to my beautiful girl who 8 years ago today at 11:26am, entered the world weighing in at 9 lbs 2oz!
You have the most amazing, lovable spirit! Every day you amaze me! I cannot imagine a world without you in it! I love you up to the sun , the moon, beyond and back!

Jello Cake

This was Logan's request this year for her birthday cake.  Super easy and super yummy.  I hadn't made it in a few years, so it was fun to re-visit this one!














To make:

1bx white cake mix
1 1/2 cups hot water
1 6oz box strawberry jello
1 can strawberry soda
1 1/2 cups cold milk
1 large pkg vanilla pudding
1 12oz tub of cook whip

Make white cake as directed. While hot poke holes 1/2 inck apart with a fork.
Mix jello and hot water unitl disolved, add can of soda. Slowly pour over cake and refrigerate.
Icing:
Mix vanilla pudding with milk until thickened, fold in cool whip, spread and refridgerate!
